How to make moinmoin?

Moin Moin is a popular Nigerian dish served at special occasions as weddings, parties, dinners, and other celebrations. So let’s learn how to cook it!

Moin Moin is pudding cake made from beans. Moin Moin is so popular because of its adaptability. There are a lot of ways of serving it, for example, with Garri, stuffed inside the bread, dipped in ketchup or served with white rice. Moin Moin is traditionally steamed inside a pot with the leaves of Ewe eran or Banana leaves. People usually steam up or bake Moin Moin in baking pans or aluminum foil pans.

If you have tried Moin Moin and you didn’t like it, then you’ve probably made a mistake of not blending it very well. It should be as much blended as possible because it has to have that soft sensation when eaten.

Ingredients needed

  • 11/2 Cups of dry beans
  • 1 Red Bell pepper
  • 1 Habanero
  • 3/4 Cup Diced Onion
  • 2 Tablespoons Crayfish
  • 1/4 Cup Vegetable Oil
  • 2 Bullion Cubes
  • 3/4 Cup of cooked minced Fish
  • 3 Hard-boiled Eggs
  • Salt (optional)

1. Depending on the type of beans you use, soak them in water for enough time to get soft. Don’t forget that you’ll need to peel them later.

2. Take 1 part of beans and two parts of water. Put this into a blender. Blend the mixture for 3-4 seconds and repeat it 3-4 times. We’re doing this not to blend, but to peel.

3. Put the resulting mixture into a bowl. Add enough water to fully cover the beans. Now mix the beans with your fingers and then quickly separate the skin from the beans by pouring through a sieve.

4. After that put the peeled Beans into a blender again. This time, add  Red Pepper, Habanero, and Onion and blend it all. You need to get the smoothest consistency.

5. Take the rest of the ingredients (except the boiled eggs) and combine if with the mixture in a blender.

6. Out oil, on a baking pan, you will work with. Put the mixture there and cover it with a lid or seal with a foil paper.

7. Line the edges of the pan with foil paper to prevent the Moin Moin from burning.

8. Put the Moin Moin nicely inside the Pot and cook for 45 minutes to 1 hour 30 minutes depending on the quantity of the Moin Moin. Cook until it's ready and then remove from heat and serve.

9. Insert a toothpick into the middle of the Moin Moin to see if it’s done. The toothpick should come out clean and not moist.

10. You can decorate the Moin Moin with the boiled eggs. Just cut them as you like and arrange them of the dish.

Other tips

  • Don’t use tomatoes for cooking Moin Moin. Tomatoes prevent it from being solid.
  • Check the water level quite often to make sure Moin Moin doesn’t burn and has enough liquid.
  • Don’t put too much salt. The less, the better.                                  
  • Soak the beans for the longer time if they are still hard. Soft beans are easier to blend.
